The honey processing originated in Costa Rica when a drought forced farmers to use less water to wash their beans. Surprisingly some discovered that the end product was better. Costa Rica supplies just 1% of the world's coffee and Certified Organic honey processed coffee is less than 0.1% of all Costa Rican production. This is a truly rare coffee.
